White pepper consists of the seed only, with the skin of the pepper removed. Fully riped peppers are soaked in water for few days , until the flesh of the pepper softens and digested. Then the naked seed is dried.

Piperine, the active ingredient in pepper, exerts substantial analgesic and antipyretic effects. Both pepper and piperine exert liver protective action.
